Bi Bim Bap

One of my favorite things to get for lunch is Bi Bim Bap. What is that you ask?? Simply put, its similar to a Korean fried rice. Brown rice, mixed veggies, an egg, protein of your choosing, sesame oil and some spicy sauce that makes it so delicious! It's a great deal, fulfilling and not so bad for you. I decided I needed to take it on myself at home. I knew it wouldn't be quite the same, but tried to hit on some of the flavors.


Ingredients:
  • 3/4 cup low sodium soy sauce
  • 4 tablespoons sesame oil
  • 4 tablespoons brown sugar
  • 1 clove garlic, minced
  • 1 1/2 cup brown rice, cooked
  • 2 eggs
  • 1 pound of protein of choice (shredded beef, ground beef, ground turkey, shredded chicken, shrimp, etc.)
  • sliced mushrooms, lightly sauteed
  • bean sprouts, lightly sauteed
  • sliced zucchini
  • carrots, julienned
  • chili paste
Directions:
  • Mix together the first three ingredients and set aside. 
  • Brown up your protein of choice. Add half of the soy sauce mixture after about 5 minutes. Continue cooking until most of liquid is absorbed. 
  • In another pan, fry the egg until cooked. I like a slightly runny yoke for this, but your choice!
  • Divide rice among bowls. Arrange veggies and meat around and top with egg. Drizzle with remaining soy mixture and chili paste to taste.

  1. My husband loves this dish! I am not a big fan of the gochuchang sauce many restaurants use and think I'd prefer the chili/soy mixture that you use here!

  2. I don't know if the place I get it from uses that. I just popped some Sriracha on there. Yum!
